Day 7 - February 6







WE HAVE BEEN HERE A WEEK!!!

If this were any other vacation we’ve taken, we would be going home tomorrow. That’s crazy. I feel like I’ve just gotten used to being here now. I’m so thankful that we get another three weeks here. We actually talked about possibly staying a little longer, but we don’t think we could get Kiefer’s medication down here, and we have just enough. So back to the snow we will go… but not for another THREE WEEKS!!

Woke up LATE this morning. Again, I’m left wondering: why do we seem to need so much sleep here?? I made Kiefer breakfast with a NON-STICK pan and wow, my life feels so much better. LOL. I also bought some cleaning supplies because the condo was severely lacking! A steel scrubby helped get all that cooked-on egg off the stainless pans (won’t be using those again!). Kiefer was SO happy to finally have dipping eggs this morning. The only thing we could (barely) muster with the stainless pans was scrambled.

I started work around 11:30 a.m. and prepped for my cases until about 4:30 p.m. It rained most of today, so it was a good day to just sit online and work. I have a meeting on Monday with one of the tenant’s representatives, so hopefully we can strike a deal before court.

Kiefer had leftover pizza for lunch. It’s so nice that we have ANOTHER food that Kiefer likes. The list is short, so it’s always a relief when we find just ONE more thing we can feed him.

Paul worked a bit as well and cleaned up the condo. After work, I made a peanut butter chocolate chip banana loaf. The outside was a bit burned — I think because all we have is a toaster oven, and it was SO close to the element. We did discover that there’s one more rung a bit lower, so we’ll try again using that. It still tasted really good. Personally, I think it needs more peanut butter (and I forgot to pick up vanilla, so that was missing too), but it was yummy.

We just reheated leftovers for dinner. There were burgers, chicken, and sausage, so it made for an easy dinner tonight.

Tomorrow we head to the beach! Our friend Tiffany, who lives here, is meeting us and taking us to a nice beach in the area. That should be lots of fun. Kiefer will enjoy having some other kids around — and it will be nice for us to have some other adults around too!

After dinner, I practiced some more hand embroidery stitches. I’m hoping to get through them all by the end of the weekend so next week I can actually start a project. I’m brand new to this, so I don’t expect them to be very good, but hopefully it’ll be a good representation years from now of how far I’ve come. (Or it will sit in the closet and I’ll find it years from now and think, oh yeah, remember when I was going to teach myself that??)
